The new year is upon us and I don’t know about you guys, but I am done with 2022. Paul and I started our journey almost 4 years ago and had so many plans, but no one knew that a pandemic would postpone those plans. So 2023 will be the year to restart our big plans! The first half we will finish some things here in Europe, but then the world is calling again! If all goes according to plan, we will be in Mauritius by October! In the meantime, I’ll keep cooking and trying out lots of new recipes.
As most people around me know, I love lasagna! I mean, it’s my favorite dish in the world! I’m not a full vegetarian anymore, because it was really hard to find the right balance, and because of that I was sick a lot. So I decided to eat meat once a week, and since then I feel a lot better. During our work week, we don’t eat meat (only when we go out) and I only cook vegetarian. So that meant I had to figure out how to make a tasty lasagna without meat.
In one of my previous meals I used lentils as a meat substitute and it was very tasty, so I did the same for my lasagna.
For me it is important to cook as fresh as possible, but to save some time I did use a jar of tomato sauce (with less sugar) for this recipe. Making the lasagna didn’t take much time, and the end result was delicious! Yes, no need to be modest. It was SUPER TASTY!

That looks and sounds delicious…I’m with you in that I will never be totally vegetarian but I have cut down on the amount of meat I eat but believe you need a balanced diet to stay healthy …Happy New Year, Renee 🙂
