I hope everyone had a wonderful Christmas! We had the best Christmas, because this year was a special one. We are currently living in Spain where Paul’s parents also live. To make it even more special. My mother is there too! Since it is not often (never) that both of our parents are together for Christmas, I wanted to do something special for this occasion.
I decided to bake a carrot cake from scratch (never done before, so fingers crossed)! There are many different recipes on the internet, but I like to use what’s in my cupboards, so here we go! Before baking, I always make sure every ingredient is ready to go. That makes baking a lot easier. Something my dad taught me when he cooked, and also to clean up after you use something so it doesn’t look like a tornado went through the kitchen. Thanks Dad!
Making the cake was surprisingly easy, but figuring out the baking time was a little trickier. But I managed it and I’m very happy with the end result.

Normally I would make my own cream cheese frosting, but I opted for an easy solution and bought a ready-made frosting. It’s a little too sweet for my taste, but still tasty. The basic recipe I use. You can also use the same recipe to make an apple cake, grate apples in place of carrots. It looks delicious.
