Moroccan Veggie ‘Tagine’ with couscous (including recipe)

I know, the name of this recipe is a bit misleading, because I didn’t prepare this dish in a tagine, but if you have one, it’s recommended to use it! As you know we don’t always have the right kitchen equipment or ingredients, because of our travels, but it forces me to be creative.  

When we lived in Serbia I bought a lot of different spices, because they are hard to find in the Balkan countries, but I still hadn’t used the ras el hanout spices. Hmm, what to make with this?

Back in the Netherlands I remembered making this really nice Moroccan chicken stew with apricots and couscous. I couldn’t find a lot of the original ingredients, like fresh coriander, mint, and apricots, and more importantly, I’m vegetarian these days, so I had to wing it a little bit. My kind of cooking!

The original recipe mentioned dried apricots, but I used fresh nectarines (just as nice), and I added some peppers, just because I like them. I also used the juice of an orange instead of a lemon, again because I prefer this flavor for this dish. I do believe that adding some fresh coriander and red onion over the couscous will elevate the dish! So, make sure to add some, if it’s available.

  1. Apricots and nectarines are close to the same flavor, and they cook with the same temperature/time ratio. They both taste good added to dishes, especially baked, giving a sweet yet tangy flavor. I often substitute orange juice for lemon, as I like orange better. Looks good.
