Spicy chickpea balls (including recipe)

After eating lentil burgers and homemade seitan for the last couple of months, it was time to try something else as a meat substitute. For months I’ve seen this recipe on Instagram, but never tried it. Until today and it was yummy! I can’t take credit for this recipe, but I did alter it a little bit.

We just got back from a wonderful week away to Corfu, and we were both craving some proper home cooked meals! Because in Corfu it’s really hard to find a proper vegetarian meal. After eating the same for 2-3 nights in a row, it gets boring really fast! I felt so frustrated not being able to eat properly, that I had a small piece of chicken one night. It didn’t feel good and I regretted it almost instantly. But it’s good that I had a small setback, because I know now that I really want to be vegetarian! As soon as we got home, I spent 3 hours pre preparing meals. I made a new batch of my vegetarian burgers, roasted tomato soup, hummus and the chickpea meatballs. 

The recipe is really simple and fast. All you need for the chickpea balls are some basic ingredients like chickpeas, couscous, onion, garlic and some spices, a food processor (in my case a hand mixer), and an oven. But, the spicy sauce really finishes it! So please don’t skip on the sauce!  

I was pleasantly surprised by the end result. The chickpea balls were firm on the inside and crunchy on the outside, and the sauce made it complete. Curious about these delicious spicy chickpea balls? You can find the recipe here.
