Change of scenery does a lot to a person. Three weeks ago we moved to Albania, right on the seaside. Looking out of the window every morning, seeing the sea and feeling the sunshine really makes us happy. Of course we’re working, but as soon as we are done, we walk out on the roof terrace and enjoy this beautiful place.
In a different post I will tell you a bit more about this hidden gem, called Vlore.
Because it’s so warm here (on average 30 – 35 degrees Celsius) we don’t really fancy heavy meals, so we have been eating a lot of light meals. We both like to eat tapas style. A lot of small dishes on the table and sharing the food, mainly finger food!
Hummus is one of those dishes that is perfect to dip a fresh piece of bread in, or some veggies. Yum!!!
Unfortunately, they do not sell any hummus in the stores, but they do sell chickpeas (and they are very cheap) so I decided to make my own hummus. I know, I should have done those ages ago, but it always seemed like such a hassle to make. But it’s not! Hummus is so easy to make, and it tastes so much nicer when it’s fresh!!! I have to confess that for this recipe, I added the juice of 2 lemons instead of one. Oops! But you know what?! It was very tasty! The recipe that I’m sharing with you is the correct recipe with the juice of 1 lemon, but I can highly recommend also trying the recipe with the extra lemon juice to get a nice Lemon flavoured Hummus!
