Oh my! This was so incredibly tasty! I have to share this easy recipe with you. Because we are eating a lot more chickpeas, I wanted to do something with the aquafaba instead of throwing it away.

I heard before that you can make a lot of nice things out of it, like chocolate mousse. So I really wanted to try a chocolate mousse.
As you know we are travelers and that means we are completely dependent on what utensils the Airbnb host has. For this recipe it’s important that you whisk the aquafaba, but there was no whisk or any electrical kitchen appliances in our current Airbnb. Not to worry, we bought a hand mixer in Kosovo and so far that has been proven to work as a grinder, mixer and blender.
It does take a bit longer to whip the aquafaba (in general) and with the hand mixer it still took me 10-15 minutes. (after it almost started to overheat). Besides aquafaba, you only need a bit of caster sugar, dark chocolate and a bit of lemon juice.
Now learn from my mistakes, make sure to properly melt the chocolate, I had a few chunks in mine. It wasn’t a big deal, but it gave the mousse a bit of a grindy texture. Other than that, it was close to perfect and very rich in flavor.
