Filled Courgette Rolls with Italian couscous (including recipes)

It’s still really fun cooking vegetarian food, but sometimes it can be a bit challenging to come up with new ideas. Back in the Netherlands we ate couscous regularly, and loved it. It’s just something different than potatoes, pasta or soup. It has been almost 3 years since we’ve had couscous, so I bought a pack in the supermarket. I always choose the one that is done within 5 minutes and can be used with hot or cold water. Because I like recipes that are easy and fast, remember?! 

But couscous on its own can be a bit boring or dry. Make sure not to be too careful with seasoning. That’s why I also wanted to eat it with some sort of sauce. I looked into my pantry and still had a carton of passata in there. Right! That’s going to be the base of my sauce. If you have a jar of marinara sauce, that will be perfect as well! Now I need to add some veggies. I bought a lot of courgettes that needed to be used. A long time ago I saw a recipe on Instagram with courgette rolls, but I forgot to save the recipe, so I made it from memory, and adjusted it with ingredients I had in the fridge and pantry. 

The end result was surprisingly tasty, and it didn’t take long at all to make. You need a few more ingredients, but most of them you’ll have in your pantry or fridge. Promise.
