Last week we moved from Niš to Skopje. It’s good to be back. Strange how a different country can feel like ‘home’, because that’s how Skopje feels to us. We were already quite lucky with the weather in Niš, and when we arrived in Skopje, the weather was also beautiful! Warm, sunny, and about 24 degrees (Celcius). Lovely! Because of the warmer weather, we fancy lighter meals, which means lots of salads! Yum! 

Doing groceries in Skopje is a treat. There’s this big supermarket close to our apartment and it has a large fruit and veg section. Awesome! On our first shopping trip I bought as many different veggies as possible: radish, cucumber, tomatoes, broccoli, spinach, cabbage, carrots, onions, rucola, and much more! 

On our first day in Skopje I made a broccoli pasta salad with tahini dressing. A nice light salad, perfect for the Summer! It’s a fast and easy salad to make, and perfect for lunch or dinner! I hope you enjoy it! You can find the recipe here.
