The last couple of months I’ve had a craving for Asian food! Maybe it’s because there is hardly any good Asian food in this part of the world. As a Dutch person, our Asian food is influenced a lot by Indonesian flavors, and I therefore love peanut sauce! In the Netherlands, peanut sauce was ordered with every Chinese meal and it was served on every barbecue! We put it over the chicken skewers, dipped our baguette in peanut sauce, or just eat it with our fries!
The last time I’ve had peanut sauce was at least 5 years ago, because Paul was never a big fan of peanut sauce. But times are changing and this craving started to become uncontrollable! So, sorry Paul, but you are going to get some peanut sauce!
I made an easy stir fry with what I had left in the fridge. By all means not what I would normally use for an Asian style dish, but good enough. The peanut sauce really livens up the dish and with my sweet & sour cucumber on the side, definitely worth trying! I would recommend using normal noodles instead of rice noodles and serving it with some crushed peanuts and a fried/poached egg.

Looks yummy! 🙂 If anything, that reminds me of the fried Indomie/Maggi noodles which are popular in Malaysia and Singapore (and Indonesia to some extent.) They call it Maggi goreng over there.
And I agree with you over the peanut sauce: It livens everything up!
