I’m back with another easy, fast and tasty vegetarian dish. Whenever I don’t have a lot of time to cook, I love making a pasta dish. It’s filling, fast and simple. Think of pasta salads, simple pastas with sauce, or vegetarian lasagne. It’s so tasty and more importantly: easy! When making a basic tomato sauce, I’ll always make more. That way I can put a few portions into the freezer. On a busy day, or when I don’t feel like cooking, I can just grab a bag of sauce out of the freezer. Don’t fancy eating the same sauce? No problem, you can easily adjust the flavor with some (fresh) herbs and spices.
But this time I made a pasta sauce based on cooking cream and pesto. I just love the creaminess of the cooking cream, and the flavor of pesto. Not a lot of ingredients are needed to make it taste good. I know there are many recipes out there that are probably very similar to mine, but this is my take on a vegetarian pesto pasta.
