A short post today as I am going to share a new recipe. To be honest, I wasn’t really sure if I wanted to post it, but Paul insisted that I did. I made this dish on a Sunday, because at the end of the week there are always some leftover veggies in our fridge, and most of the time we feel very uninspired what to do with it. While staring at them in the fridge, I had an idea!
One of my favorite dishes in the world is lasagne, but it can be quite heavy. Hmmm, I have all these wonderful veggies left, why not try to make a pasta free lasagne out of it? It is as simple as layering all the different types of vegetables, add a bit of sauce, whack it in the oven, and 30-40 minutes later its done!
So here is my recipe for a pasta free, leftover veggie lasagne. I hope you enjoy!

I have made quiche without a crust from leftover vegetables. A little of this and that, and you have a meal. sounds very similar.

I really hate to throw food out. It hurts my brain for some reason…lol. I also make soups and stews from leftovers.
