Time for another recipe! One based on sweet potato. I am not the biggest fan of sweet potato, but Paul bought it, so I am slowly getting used to it. There is just something about warm sweet food for dinner that I can’t really digest very well, unless it’s cake!!! Yum!!
As you know I am an impulsive cook and do not plan ahead too much. Especially while traveling, I just look at what is left in my fridge and pantry and try to make something (nice) out of it. This time I had a sweet potato left and a few vegetables that needed to be finished, so why not make a soup out of these leftovers. I always have lentils in my pantry because they are really filling and taste earthy.
Chopping the vegetables is almost therapeutic. I love taking my time to prepare everything. This time I had my Mum on video call, and while preparing the veggies and sweet potato, we had a nice long chat. Don’t worry, I still have all my fingers!! While talking, I was paying attention to the knife, because a mistake is easily made.
I didn’t expect too much from the soup, but it actually turned out really well. To be honest, the color isn’t the most appealing, but trust me when I say that the flavor is great!
