Becoming a vegetarian: My journey – part 1

After doing Bloganuary, I had to take a small break, but I am back. Let me take you on my journey on becoming a vegetarian. For years I have been toying with the idea of becoming a vegetarian, for different reasons, but there was a really important one. Since I was 8 I have been diagnosed with IBS. Not a serious illness, but it can be very uncomfortable and painful. With this, eating healthy is really important, because of how your body processes food. In the beginning I didn’t really have any complaints, unfortunately that changed after my 35th. 

Since then I have had a lot of discomfort caused by IBS. So you try a few things, like the FODMAP diet, medication, drinking lots of water, and it helped. Temporarily! I knew eating meat wasn’t the best thing to do, because it processes really hard, but I couldn’t stop eating it. I never really cared for fish, so this one should be easy. Over the years I did cut down on meat, but never fully committed, until not too long ago. After watching a documentary on Netflix, called ‘Seaspiracy’, I was horrified by the animal abuse and the effects on our world, so I decided it was time to go ‘all in’!

The first couple of days were easy! We both love vegetables, so we had some really nice vegetarian meals. We are almost a week in, and we are starting to struggle a bit with being creative on what to eat. We are currently in Kosovo and the types of vegetables we can find here are very limited or really expensive! Everything is imported here, so you easily pay € 4,- for a head of lettuce!!

Yesterday we walked around Pristina, and found this amazing place called: Matcha Coffee and Eatery. It was founded in 2019 and born out of frustration with the lack of places that serve healthy food and have vegetarian and vegan options. Sounded good, so let’s have a look.

The food here is so fresh! We tried some avocado toast with poached eggs and a nice carrot ginger soup. That gave us inspiration! Why not make our own soups and sauces? All we need is a hand mixer and we are ready to go!

Because we travel every 3 months, and all of our possessions have to fit in 2 bags. We can’t purchase a lot of extra things, because we don’t want to carry around too much stuff, but in this case, it is worth it! So we purchased a hand mixer and are super excited to start making some really nice soups and sauces and maybe even some other things! Over the next months, or maybe even years, I will share my experiences (and struggles!) with you and hopefully even some nice recipes!

    Kastanje pannekoek met groenten
    And do you love soms curry??
    I dont know if you have all the kruiden there to buy!

  2. One week in.. woohoo!
    There are a lot of vegetarian options that are super easy to do. But you’ll need a pressure cooker..
    Rice- super easy to make- throw in veggies like carrot or beans and some spices and you’ve got flavoured rice!
    Or plain rice and boiled chickpeas curry!
    Simplest meals would be- just to chop whatever veggies you have and use a soft tortilla and make a roll!
    Again, I am not sure what are the veggies you do get.. but if you have potato-onion curry with the soft tortilla- amazing!
